That Sweet Potato Thing

There’s something about the sweet potato that I LOVE, whether its sweet potato fries, crisps or mash. Here’s the recipe for the crisps and mash, you’ll have to wait until next week for the ‘art of the crispy sweet potato chips’! 

Sweet Potato Crisps 

1. Finely cut sweet potato slices

2. Melt 2 tsp of coconut oil and dip in each slice

3. Cover each slice with a sprinkle of paprika and lay flat on a baking tray

4. Bake for 20 minutes at 180 degrees, turning each slice over at 10 minutes **some may cook faster than others so keep an eye on them

 

Sweet Potato Mash

1.Take a couple of sweet potatoes.Prick them with fork and pop in the microwave for approx 5 minutes.. Depending on size etc.

2.Once soft chop the tips off and remove and then chop the potatoes. Add seasoning – I added some pepper but you can use anything.. garlic, chillie, reduced fat feta. The mash has a great texture and with the skin included increases your fibre intake too.
